I am sure by now my friends know that I worship, ahem, love my instant pot. Actually BOTH of my instant pots!! The instant pots have saved my butt more nights than I can count!! Something I LOVE to make is chicken bone broth. In order to do that I was buying whole rotisserie chickens from the grocery store. At $8 a pop, it was adding up, even if I did get two quarts of stock out of the bones. I discovered that I can get good sized whole chickens in two packs at Sams Club for about $7. Through much pursuing and many complicated recipes....I present to you, the simple IP whole cooked chicken! It's simple!!
First add your rack into the bottom of your pot. I like to rinse my chicken first, it's a weird habit. Salt and pepper the breast side and put the chicken in the pot, breast side down.
I like to use smoked salt but if you don't have any, that's ok, just normal is ok. Salt and pepper the back side of the chicken once it's in the pot. Add one cup of water, put the lid on and set it to sealing!
Manual high pressure for 25 minutes with full natural pressure release. (What's that mean?! When your pot beeps to shut off after countdown, hit cancel and let it sit until the pin drops and you can open the pot!)
And just like that, you have a beautifully cooked whole chicken.
