I am not going to lie to you, I hate beets. They smell nasty and they taste like dirt. But they have so many good nutrients in them that I WANT to eat them. So a few days ago when I was watching Food Network and one of my favorite shows comes on and he's talking about beets, I was all ears. Sandwich King is a great show, the host, Jeff, is a little goofy to watch but his recipes are no fail! He was making chicken schwarma (which I cannot wait to try) among other things and roasted beet and mint hummus. When he said the mint canceled out the "earthy" flavor of the beets. I was on board immediately. It was at least worth a try!! So when I was at the local HEB (Here Everythings Better, grocery store) I picked up what I THOUGHT was all the ingredients! This morning when I started dumping ingredients into my Ninja blender, I realized that I was wrong with a capital W! OH NO! So in comes my substitutions...and what came out was a delicious mixture that will probably be a constant in our fridge...as well as a little mint gum on the side, for when we are done! HA! So without further wait...
Roasted Beet and Mint Hummus
1 giant can of Chick Peas (1 pound 13 oz), drained and rinsed
2 cloves of garlic
2-4 roasted whole beets (I cannot fib...I bought these from the produce section already cooked, no way was I stinking up my house baking them!)
1/2-3/4 cup of fresh mint leaves
3 TBSP all natural almond butter
1/2 lime, juiced
2-3 TBSP toasted sesame oil
3-4 TBSP olive oil
Dump everything in a blender or food processor and blend until smooth! Out comes a beautiful, pink, garlicy concoction that may just make you love beets. Serve with fresh veggies, chips, or pita bread. Enjoy! (PS You could also use tahini paste instead of the almond butter/sesame oil and lemon instead of lime, like the original recipe suggests)
